How can I help my husband be healthier?

When I first met my husband, he was pretty thin. That was 3 years ago. He has steadily been gaining weight since. About a year ago, he quit smoking cigarettes, which I am so grateful for. But he started putting on a lot of weight after that. He's constantly eating. I make a nice healthy, filling meal, and 10 minutes later, he's in the kitchen munching on chips, cookies, ice cream. He literally snacks throughout the day when he's home. He works 6 days a week, so Sunday is his pig out day. I can't get him to eat anything healthy, and just getting him to go for a walk with me and our daughter is a huge pain in the . He always has an excuse-he's too tired, it's too hot, we'll do it tomorrow. This isn't just a vanity thing-I'm really starting to worry about his health. We have an at home blood pressure machine and I've made him use it. He does have high blood pressure, but refuses to go to the doctor. I've tried everything I can to try and help him eat better, excerise more, and go to the doc but nothing works. I want him to be setting good eating examples for my daughter. I don't want her thinking she can just go to the kitchen and eat junk all day. I've tried being nice, I've gotten a little nasty about it. Sometimes he'll agree with me, but I think it's just to get me to shut up because nothing ever changes. It's not like I'm nagging him about it 24/7 either. He has this mentality that nothing bad will ever happen to him. He's only 22, so I don't think he realizes the risks in the future-even though I've pointed them out to him. He just shrugs it off. Any suggestions? I know he's a grown man and can do what he wants, but it's starting to affect the whole family. Any help would be appreciated.
